This recipe has been refined many, many times during my time as a vegan. I believe this is the definitive version. Since my heart attack i have refined it further to be oil free. It is still delicious on top of oil free bread or toast, or included in a wrap with salad and smoky jackfruit.
Time: Approximately 20mins
Ingredients
150g Firm tofu
2 and 1/2 tbsp Nutritional yeast
1 tbsp Dried or chopped fresh chives
1 tsp Paprika
1 tsp Dijon mustard
1 tsp Garlic granules
1/2 tsp turmeric
1/2 tsp Onion granules
1/2 tsp Himalayan black salt (if avoiding salt, use low sodium tamari or soy sauce, or even extra dijon)
100m unsweetened soya milk (ensure oil free) + extra splash for the pan
Method:
1- In a bowl, mash the tofu with a fork.
2- In a separate bowl add all of the ingredients through to black salt.
3- Add soya milk to the mixture and stir until well mixed together
4- In a small frying pan pop in approx. 2 tbsp of soya milk, add the tofu and stir for about 1min.
5- Stir in the wet mixture and cook on medium heat stirring often for about 4-5mins.
6 – Enjoy on oil free bread, with grilled tomatoes and spinach.
