Oat Cookies

These are my go to sweet snack. Quick and simple to make, no refined sugar, with all the sweetness you need.

Time: approximately 20mins plus cooking time.

Ingredients

110g Oats
100g Oat meal
2 tbsp Flax seeds
60g Dates chopped small
85ml Maple syrup OR date syrup OR agarve nectar
100ml Soya milk
1 tbsp Vanilla extract

Method:

1- Pre heat the oven to 175 degrees C

2 – Put the oats in a large frying pan and toast for 5 mins stirring often so they don’t burn

3 – Put all of the ingredients in a bowl and mix well into a dough

4 – break off about a tablespoons worth of dough and roll into a ball about the size of a golf ball. Place onto a baking tray lined with baking parchment.

5 – Flatten the balls down with the back of a fork.

6 – Bake in the oven for 22-25mins, checking after 20mins to check they are not cooking too quickly.
