Greaseless Gravy

Like most things gravy granules are full of sodium and/or animal fat, which is full of cholesterol. I have adapted this recipe from the ‘How to Prevent and Reverse Heart Disease’ book, by Caldwell B. Esselstyn, Jr., MD.

Time: Approximately 20mins.

Ingredients

3 tbsp wholemeal plain flour
50ml Red wine (vegan) **This can be omitted if necessary
450ml Water (or 500ml if omitting the wine)
1 tsp Dried parsley
1 tsp Garlic granules
1 tsp Onion granules
1 tbsp Low sodium tamari or soy sauce
1/4 tsp Marjoram
1/4 tsp Turmeric
1 tsp Dijon mustard or English mustard for extra kick
1/4 tsp White pepper.

Method:

1 – Pop flour into saucepan, then add the water, then wine and stir vigorously with a whisk to make sure the lumps disappear.

2- Add all the other ingredients, stir and bring to the boil.

3 – Let it simmer, stirring often for 10/15min until thickened.

This is delicious poured over mash potato made without butter and over veg for roast dinners.
