English Breakfast Bean Sausages

These are a brilliant sausage alternative, it is a bit time consuming but worth it! They are very tasty and can be used in a sausage sandwich accompanied by the homemade BBQ sauce or if used very sparingly and not too often, shop bought ketchup. Maybe knock up sausage and mash with my Greaseless gravy or chop up and put in pasta dishes.

Time: Approximately 1hr30mins

MAKES AROUND 8 SAUSAGES

Ingredients

180g Cannellini beans
50g Oats or oat bran
50g Vital wheat gluten
1 Garlic clove crushed
1.5 tbsp Dried sage
1.5tsp Dried thyme
1 tsp Onion granules
1 tsp Black pepper
1 tsp English mustard
1/4 tsp Ground nutmag
1/4 tsp All spice
1/4 White pepper
2 tbsp Vegan Worcester sauce
2 tbsp Apple cider vinegar
20g Nutritional Yeast

Method:

1 – If using oats (not oat bran) pop these in the food processor first and pulse until they kind of look like bread crumbs.

2 – Put all of the ingredients into the food processor. Blitz until you have formed a sticky (ish) dough mixture.

3 – Lay some baking parchment on a plate or baking tray with a light sprinkling of the vital wheat gluten.

4 – Dampen hands and take out the mixture half a hand full at a time, and roll between your hands forming a sausage shape approximately 10/11cm long. Place on the dusted baking parchment. Repeat processes until all of the mixture is used up.

5 – Place the sausages on the plate into the fridge for at least 30mins

6 – Whilst the sausages are cooling cut pieces of tin foil that you can wrap the sausages up in.

7 – Pop 5/6cm of water on the heat to boil in the saucepan. Remover the sausages from the fridge. One by one, wrap the sausages in tinfoil. Twist each end like a sweet wrapper. Repeat until all wrapped.

8 – Place the wrapped sausages into the steamer basket, reduce the now boiling water to a simmer and place the basket on the saucepan with the lid on. Simmer for 25mins.

9 – Remove from the heat and let the sausages cool still wrapped up. Once they have cooled completely, pop them in a air tight container and store in the fridge, until needed. When using, put them under the grill for 5/6 mins, turning once, and keeping an eye on them so they don’t burn. (although i do like them burnt slightly!). Use as desired.
