So good and simple. Once the queso sauce is pre prepped this recipe is super quick! Really tasty, pop some air fried roast potatoes on the side with some peas. Yum.
Time: Approximately 25mins (50mins if making sauce at the same time)
Ingredients
530g mixture of cauliflower and broccoli, chopped into florets, mixed sizes.
1 Red onion, roughly chopped
Good handful of spinach, chopped

Method:
1 – Put the cauliflower and onion into a steamer basket with cold water in the saucepan underneath. Turn on the heat. keep checking the water, once it is boiling, steam for 10mins.
2 – Roughly chop the spinach ready.
3 – Place the cauliflower, onion and spinach in a baking dish, approximately 9- 11 inches wide. Mix the veg with a spatula to evenly spread the veg.
4 – Put the queso sauce in a saucepan on a medium heat and stir constantly until thickened very slightly. About 3/4mins. Pop the oven on at 200 degrees C
5 – Pour most of the sauce onto the veg. Give it a good stir so that the sauce is evenly distributed throughout the dish.
6 – Pour the rest of the sauce over the top covering the veg.
7 – Pop it in the oven and bake for 10/15mins until bubbling a bit and the top thickening a bit. remove and enjoy!
