Very quick to put together when you want something sweet. Ideally i would like to do this with raisins or sultanas, but i cannot find any anywhere without oil in. Dates are a great substitute though adding a bit of extra moisture and chewiness here and there.
Time: Approximately 50mins
Ingredients
200g Buckwheat flour
50g Oats
60g Cornmeal (polenta)
1 Tsp baking powder
1/2 Tsp Bicarbonate of soda
1 Ripe banana
2 Tbsp apple cider vinegar
2.5 Tbsp maple syrup
430ml Soya milk
100g Dates, chopped
Method:
1 – Put the oven on to pre heat to 180 degrees C.
2 -Put all the dry ingredients into a bowl and mix together to combine.
3 – In another bowl, mash the banana with a fork, then add all of the rest of the wet ingredients and stir to combine well.
4 – Pour the wet mixture into the dry and mix together to form the batter.
5 – Add in the chopped dates and stir again.
6 – pour the mixture into a loaf tin lined with baking parchment.
7 – Put in the oven to bake for 30mins. Check after 25mins to make sure it is not burning.
8 – Test the mixture by sticking a knife into the middle, if it comes out clean, its done.
9 – If it isn’t done, i normally cover the loaf with tin foil to prevent the loaf from burning and bake for another 10mins, checking it again after 5mins.
10 – Pop on a wire wrack to cool, then slice and enjoy.
